The Craft Of Manutea 40°: From Polynesian Cane To Pure Spirit

Manutea 40° is a premium pure cane juice rum that celebrates the rich Polynesian terroir through the use of exceptional O'Tahiti sugar cane. Grown in extensive plantations that require manual harvesting, the cane undergoes a single crushing process without any added water to preserve its intense, natural fragrance. The resulting juice is fermented over six to eight days until it reaches a strength of 7°—becoming a liquid known as vesou—before being transported by schooners to the Manutea Tahiti distillery on the island of Moorea. There, the spirit is crafted using a traditional discontinuous still, demanding the utmost precision from the master distiller who meticulously separates the heads and tails to isolate the aromatic heart of the distillate, which features elegant notes of mint, liquorice, and pear. Finally, the rum undergoes a meticulous three-month process of aeration and slow reduction before it is bottled, ensuring the full aromatic palette of the O'Tahiti cane is perfectly preserved.
